The Ultimate Full English Breakfast

Ingredients
- 4 pork sausages
- 4 rashers smoked back bacon
- 3 tbsp vegetable oil
- 400g can plum tomatoes
- 2 slices black pudding
- 2 large free-range eggs
- 2 slices thick bread
- 100g mushrooms, sliced
- Butter
- Salt and pepper
- HP sauce to serve
Start with the sausages. Cook them in a frying pan over medium heat for 12-15 minutes, turning regularly, until golden and cooked through.
Add the bacon to the pan and cook for 2-3 minutes per side until the fat is rendered and crispy.
In a separate pan, heat a little oil and fry the black pudding for 2 minutes per side until crisp.
Tip the tomatoes into a small saucepan with a pinch of salt and pepper and simmer for 5 minutes until thickened.
Fry the mushrooms in the bacon fat until golden.
Fry your eggs in hot oil — baste the tops with hot oil for crispy edges and runny yolks.
Toast the bread, butter generously, and arrange everything on warm plates.
The order of battle
Timing is everything. Start the sausages first (they take longest), then bacon and black pudding, then tomatoes, mushrooms and finally eggs. Everything should be ready at the same time.
